Abstract:
PROBLEM TO BE SOLVED: To provide tart-shaped baked confectionery with new palate feeling, in more details, tart-like baked confectionery in which crack, and breakage and waste when cutting and dividing are taken into consideration, and which has an edible base part enabling enlarging, and to provide a production method for the same.SOLUTION: Tart-like baked confectionery comprises a re-baked sponge mold that is molded from baked sponge, and is baked again, and a filling topped on the re-baked sponge mold. A production method for the tart-like baked confectionery includes: a baked sponge preparing step; a mold molding step of molding the baked sponge to make a sponge mold; a baking step of heating the sponge mold in an oven so as to obtain a re-baked sponge mold; and a topping step of topping a filling material on the re-baked sponge mold.SELECTED DRAWING: Figure 2
