Abstract:

To provide a taste- or flavor-improver effectively suppressing heat-induced deterioration of food and drink or the like, in particular, heat-induced deterioration smell of the food and drink containing milk or the like.

The taste- or flavor-improver suppresses heat-induced deterioration smell by adding a solvent extract from dried leaves or stalks of a plant of the genus Mentha of the family Labiatae to food and drink containing milk or the like. The solvent extract has effect of suppressing the heat-induced deterioration smell of other food and drink, cosmetic products and the like as well as the food and drink containing milk or the like, so as to produce the excellent taste- or flavor-improver.
