Abstract:

PROBLEM TO BE SOLVED: To obtain a taste improver which contains a protease-treated product of whey and a lipase-treated product of butterfat as active ingredients and can mask strange smells and odors and endow, enhance and improve flavors and tastes of beverage and food products, when it is added to them.
SOLUTION: The protease-treated product of whey is concentrated and the concentrate is admixed to a solid diluent such as arabic gum, dextrin, glucose or sucrose or a liquid diluent such as water, ethanol, propylene glycol, glycerol or a surfactant. Further this mixture is combined with a lipase-treated product of milk fat such as butter oil, butter, cream, or milk.
