Abstract:

PURPOSE: To obtain the title taste improver preventing a peculiar smell of soybean protein and further emphasizing taste of edible meat processed product, comprising melanoidine and decomposition product of egg white.

CONSTITUTION: The objective taste improver comprising 1 pt.wt. melanoidine and 1-1/3 pt.wt. decomposition product of egg white. In production of sausage, hamburger, ham, meat ball, giaoz (a Chinese cooking, fried or steamed dumpling stuffed with minced pork), etc., 0.05-0.5 % of the improver is added.
