PURPOSE: To obtain the above readily usable product having easy preservation, excellent fragrance and visual beauty, by adding a proper amount of sugar and a very small amount of citric acid to petals of cherry and freeze-drying.
CONSTITUTION: Cherry petals of collected cargo are well washed with water, sprinkled with 5W30wt.% sugar and 0.3W1.5wt.% citric acid and immersed at 0W5°C several days. Then a oozed solution produced during cold storage is separated and the petals, a separated solid component, is freeze-dried to give tea of cherry blossom. On the other hand, the separated oozed solution is mixed with a small amount of an additive for adjustment such as sweetener, etc., adjusted and freeze-dried in a vacuum to give a spice of tea of cherry blossom. The prepared tea of cherry blossom and the spice are individually used, the spice is added to the tea of cherry blossom floated in warm water or one or two petals of tea of cherry blossom are floated in a drink consisting essentially of the spice and used for drink.
