Abstract:
To solve the problem in which conventionally proposed tea flavor compositions are not entirely satisfactory in terms of the masking of raw materials used in foods, the improvement of flavors of the raw materials, and palatability such as refreshing feels, and to provide a novel tea flavor composition that keeps high palatability for a long time, effectively improves flavors of the raw materials of foods and masks foreign odors, is stable even in acidic and basic regions, and does not impair the actions or functions of the raw materials of foods, and foods and drinks containing the novel tea flavor composition.SOLUTION: A tea flavor composition contains at least one flavor selected from the group consisting of specific natural flavors, hydrocarbons, alcohols, aldehydes, ketones, acids, esters, lactones, nitrogen-containing compounds, sulfur-containing compounds, phenols, furans and pyrans.SELECTED DRAWING: None
