Abstract:
PURPOSE: To provide the subject compound useful as a flavoring substance or a flavor-imparting substance.
CONSTITUTION: 2(3)-Dihydrofarnesal of the formula. All geometrical isomers of the compound, including 6E type and 6Z type isomers, exist. The compound is used in a concentration of 0.1-40%, preferably 3-20%. The compound can be produced e.g. by hydrogenating farnesal. The compound exhibits a fresh flavor-like aldehyde-based fragrance not obtained from the farnesal.
