Abstract:
To provide a texture improving agent and a texture improving kit for improving the texture of a meat paste product, capable of imparting favorable texture to a meat paste product having a form of pressed ham even if phosphate is not used, and to provide a production method of a meat paste product.SOLUTION: A texture improving agent contains a dispersion of animal oil and fat and vegetable oil and fat. The animal oil and fat is at least one kind of oil and fat selected from the group consisting of lard and tallow. The texture improving agent is mixed with raw material meat to make patty, and the product is heated. The texture improving agent can be used together with a prescribed alkali salt so as to improve the texture of a meat paste product having a form of pressed ham. The meat paste product having a form of pressed ham for instance, with rich resilience can be provided without containing phosphate.SELECTED DRAWING: None
