Abstract:

PURPOSE: To prevent the deterioration of the qualities of cakes or Japanese-style cakes after thawing, and to preserve the cakes for a long period, by placing frozen cakes into a sealed vessel without exposing to outer atmosphere, and thawing the cake contained in the vessel in a heating cabinet.

CONSTITUTION: Cakes or Japanese-style cakes are cooled spontaneously to the room temperature after baking, and placed in a sealable shallow vessel 15. After closing the vessel air-tightly with a lid 17, the cakes are frozen in a freezer at -17W-30°C. In case of thawing, the sealed vessel containing the cakes is put in a low-humidity heating cabinet kept at +15W+80°C, and left to stand for about 10W40 minutes. When the content is heated to the room temperature, the vessel is taken out of the heating cabinet, and the lid 17 is opened.
