Abstract:
PURPOSE: To provide a process for thawing a frozen NIGIRI-SUSHI (hand-rolled vinegared rice topped with a fish fillet) and serving the NIGIRI-SUSHI in a state of hot rice and cold topping similar to ordinary NIGIRI-SUSHI.
CONSTITUTION: A small-sized simple apparatus and process for thawing a frozen NIGIRI-SUSHI in an integrated state. Since it is impossible to uniformly heat and thaw the rice 11 and the topping 10 of a frozen NIGIRI-SUSHI at the same time, the rice 11 is heated and thawed while varying the temperature and the topping 10 is thawed while cooling with forced hot air flow and forced air flow.
