Abstract:

PURPOSE: To provide a method for thawing capable of being used in a relatively small scale bakery only having a freezer and a steam oven.

CONSTITUTION: A method for thawing a frozen baked bread and/or confectionaries inwhich the bread is tightly sealed directly after baking and is frozen after cooling it to an ambient temperature, and on thawing the bread, it is thawed by the steam heating in an oven and tightly sealed again to complete the thawing by leaving it in an ambient temperature. A method for thawing a frozen bread and/or confectionaries in which the bread is tightly sealed directly after baking and is frozen after cooling it to an ambient temperature, and on thawing the bread, it is thawed by the steam heating in an oven and tightly sealed again by addition of a small amount of water to complete the thawing by leaving it in an ambient temperature.
