Abstract:
PROBLEM TO BE SOLVED: To provide a new method of thawing a frozen product which can effectively exert a function of voltage application thawing while controlling the thawing temperature of the frozen product appropriately, compared with conventional methods.SOLUTION: A method of thawing a frozen product 21 is based on thawing the frozen product in a container 10 by applying an AC voltage of 10 V to 5 kV to the frozen product so that an electric current of 1 μA or higher and 1000 mA or lower flows in the frozen product and includes a half-thawing step of controlling the temperature of the inside of the container, while applying the AC voltage to the frozen product, so that the frozen product gets in a half-thawed state and a storage step of stopping the application of the voltage and storing the frozen product by keeping the half-thawed state.
