Abstract:

PURPOSE: To obtain a new food boiled down in soy, having the surface coated with a large amount of a covering material, not found in conventional products.

CONSTITUTION: A food boiled down in soy obtained by using a seasoning solution prepared by utilizing cells having glucosyl transferase activity or an extract thereof through biosynthesis by a method such as floating boiling or baking boiling.
