Abstract:

PURPOSE: To obtain the titled food having unique texture like buckwheat noodle or SHIRATAKI (noodle made from devil's tongue starch), by treating marine algae with an alkaline solution, crushing with a mixer to obtain a liquid, heating and concentrating the liquid, extruding through a nozzle into a coagulation bath and neutralizing the produced threads.

CONSTITUTION: Marine algae such as tangle, WAKAME seaweed, etc., is boiled optionally in the presence of water and stirred with a solution of an alkali such as sodium carbonate to obtain a slurry. The slurry is treated with a mixer to eliminate solid component and the obtained liquid is concentrated by heating. The concentrate is extruded through a nozzle into a solution of calcium chloride. The formed thread-like coagulum is neutralized with a solution of an acid such as hydrochloric acid and washed with water to obtain the objective food.
