Abstract:
PURPOSE: To provide a method for mechanically obtaining meat with a comparatively smooth and nice cross-section from a poultry body part at a high rate. CONSTITUTION: The poultry body part is fixed to fowl body part carrier saddle 12 so as to be carried forewards by a conveyor 11, skin is partially peeled-off by an extansion finger in (a) and, then, skin 19 is integratedly separatedly from a spinal column part by a rotating conical roller 18 in (a'). Then, a wild duck skull is separated from meat by a pair of knife blades 21 in (b). After that, the meat part of a wing joint part is separated by a pair of knives 27 in (c). In succeeding (d), a pair of scratching blades 23 are slid along a shoulder blade so as to separate the meat part stuck to a rib. The meat part stuck to a bones and a sternum plate is lifted-up so as to be separated from a skeltal structure part by scraching fingers 30 and 31 in (e) and, finally in (f), separation is executed by the scratching finger 33.
