Abstract:
PURPOSE: To provide an egg processed product using yolk, etc., solid at normal temperatures, causing no segregation or aggregation after cooled, preservable for a long period of time, and excellent in functional characteristics.
CONSTITUTION: A mixture of (A) yolk (including a material predominant in yolk) dehydrated to a water content of ≤15wt.%, (B) a total of ≥30wt.% of sugar and another saccharide and (B) ≥30wt.%, in terms of lipid, of fatty oil ≥20°C in melting point, is ground and then melted into a fluid, which is then cooled, thus obtaining the objective product.
