Abstract:
PURPOSE: To provide a method for solidifying oils and fats and their hydrolyzed products containing highly unsaturated fatty acid easily subjected to oxidative degradation to stabilize them by solidification, capable of increasing crushability of solidified products, excellent in functional evaluation of products and capable of safely processing at low cost.
CONSTITUTION: One or 2 kinds of oils and fats selected from oils and fats containing highly unsaturated fatty acids, diglycerides of highly unsaturated fatty acids, highly unsaturated fatty acid monoglycerides and highlyunsaturated free fatty acids are mixed with zein and heated in moisture at 100-169°C to solidify highly unsaturated fatty acids.
