Abstract:

PURPOSE: To obtain a naturally bleached proteinic food material having improved free refrigerating and keeping quality with suppressed autolysis and no fishy smell, by dividing the whole meat of a fish or crustacean into pieces of a specific particle size or below, crushing the divided pieces, and kneading the crushed meat before the starting of the autolysis.

CONSTITUTION: A proteinic food material obtained by dividing the whole meat of a fish or crustacean, including krills, into pieces having ≤200 microns average particle size before starting the autolysis thereof, crushing the divided pieces, and kneading the crushed pieces. The whole egg of an animal egg or either one of animal fat or oil and animal milk or both may be further added to the whole meat of the above-mentioned fish or crustacean.
