Abstract:

PURPOSE: To efficiently improve the taste of foods, medicines etc., so as to be excellent in fanciness by adding thaumatin and a specific phenoxyalkanoic acid (salt) to a gustatory substance etc.

CONSTITUTION: The objective taste improvement can be accomplished by adding, to a gustatory substance such as one presenting salty taste, bitter taste, or a combination thereof, or a food containing the substance, (1) pref. 0.001-10000 pts.wt., based on 100 pts.wt. of the gustatory substance, of thaumatin and (2) pref. 0.001-200000 pts.wt. of a phenoxyalkanoic acid of the formula (R is H, halogen, OH, lower alkyl, lower alkanoyl or lower alkoxyl; n is 0-4; A is 1-5C lower alkylene) such as (±)-2-phenoxypropionic acid (or a salt thereof).
