Abstract:
PURPOSE: Soybean milk, preferably fermented soybean milk is used as a starting material to make ice cake, thus giving tasteful health food.
CONSTITUTION: Soybean milk, preferably fermented soybean milk is used as a starting material to make ice cake. The above fermented soybean milk is made by adding a lactobacillus starter to a previously sterilized and homogenized soybean milk to effect fermentation until its pH reaches a prescribed value and cooling it at a temperature lower than about 10°C. For example, 100pts.wt. of customary ice-cake materials are combined with 20pts.wt. of the mixture of 80pts.wt. of soybean milk or its fermented product and 20pts.wt. of sucrose and the resultant mixture is made into ice cake.
