Abstract:
PURPOSE:To obtain the subject labor-saving and space-saving apparatus capable of keeping the temperature to a definite level during fermentation by continuous ly circulating a number of racks in vertical direction, placing a pack containing cooked soybeans sprinkled with Bacillus natto on each rack and fermenting the soybeans in the pack. CONSTITUTION:The objective apparatus is provided with a number of racks 12 for holding packs containing cooked soybeans sprinkled with Bacillus natto and a means for continuously circulating the racks 12 in vertical direction. The NATTO (fermented soybean) pack placed on the rack is circulated in vertical direction and, at the same time, the ambient air is gently stirred by the motion of the racks to enable the fermentation with Bacillus natto at a definite temperature independent of the temperature difference between the top and the bottom of the fermentation chamber 2.
