PURPOSE: To prepare raw noodles to be boiled extremely in a short time, by impregnating raw noodles with a given amount of water, forming a coagulable film of calcium alginate on the surface and the interior of noodles lines.

CONSTITUTION: Noodle raw materials are blended with alginic acid or a water- soluble alginate, and, if necessary, soybean milk, and processed into noodles. The prepared raw noodles are immersed in water containing a calcium salt so that alginic acid is reacted with the calcium salt, and they are impregnated with a given amount of water.
