PURPOSE: To enable the utilization of molasses containing a specific component as a low-cariogenic hardly-crystallizable syrup, by treating a sucrose syrup with a palatinose-producing enzyme, converting more than a specific amount of sucrose to palatinose, separating the crystallized palatinose, and using the remaining liquid as the objective syrup.
CONSTITUTION: A sucrose syrup is treated with a palatinose-producing enzyme (e.g. Protaminobacter rubrum, Serratia plymuthica, etc.) to convert ≥70% of the sucrose to palatinose. A seed crystal of palatinose is added to the product, and the produced palatinose crystals are separated by centrifugal separation. The concentration and crystallization of the obtained molasses are repeated to separate the molasses into crystal and syrup. A low-cariogenic hardly-crystallizable syrup having a solid concentration of usually 60W80% and containing 30W70% 1-O-α-D-glucopyranosyl-D-fructofuranose and 10W30% palatinose can be prepared by this process.
