PURPOSE: To obtain a separated liquid seasoning which is by far resistant to the precipitation of dregs compared with the seasoning prepared by conventional process, by filtering the whole water phase prepared from required raw materials with a precoated filter or an organic cationic filter.
CONSTITUTION: Required raw mateials such as vinegar, orange juice, salt, sugars, spices, colorants, and water, etc. are mixed, dispersed or dissolved to obtain a water phase, which is filtered with a precoated filter or an organic cationic filter or preferably with both filters. The obtained water-phase is topped with an oily phase consisting of a spice extract, a flavor, an antioxidant, a colorant, and edible vegetable oil or fat to obtain the objective separated liquid seasoning. The precoated filter is manufactured prior to the filtration treatment, by depositing a filter aid such as alumina gel to a substrate such as metal net to a thickness of about 1.5W7mm. The organic cationic filter is obtained by coating the surface of the filtering material composed of fine solid granules with a cationic organic electrolyte.
