Abstract:

PURPOSE: To heat up to the central part without the discoloration of a raw material and reduce the oil frying time, by specifying the temperature of an oil, and using a high-frequency induction heating in frying the material in the oil.

CONSTITUTION: An edible oil is introduced into a container 2 having a high-frequency induction heating apparatus 1 and heated, and a material (A) is fried in the edible oil within 120W140°C oil temperature range. In the process, the high- frequency induction heating is used together. The material (A) is heated from the outside by the oil, and from the inside by the generated heat from the high-frequency waves. Thus, the material (A) can be fried at a lower temperature than the conventional oil temperature, and the sticking of fine particulate foreign materials from the material (A) is prevented without causing the deterioration and change in quality of the oil nor scorch.
