Abstract:
In a process for producing packaged foods with a smoked flavour, in particular sausage, the packaging material has a liquid smoke coating applied to its inner surface shortly before or during the packaging operation. This can be done with a liquid smoke distributor device allocated to the filling pipe (10). An alternative embodiment is provided with a coating station (31) situated upstream (in the direction of advance) of a tube-extrusion station (41), said coating station applying liquid smoke to the flat packaging material (48) while still in the form of a strip; a drying device (40) can also optionally be provided for drying the liquid smoke.
