Abstract:
PURPOSE:To produce fermented milk having excellent flavor and fine and palatable texture by fermenting milk with Bifidobacterium and lactic acid starter of Streptococcus thermophilus and Lactobacillus acidophilus. CONSTITUTION:Raw materials having prescribed amounts are blended, heated, dissolved and subjected to homogenizing treatment and sterilized. Then the mixture is cooled to about 43 deg.C. A complex bacterium strain starter consisting of one or two kind of bacteria among Bifidobacterium longum SBT 2933R (FERM P-8743) and Bifidobacterium longu, SBT 2928 (FERM P-10657) and lactic acid bacteria of Streptococcus thermophilus SBT1021A (FERM P-10658) and Lactobacillus acidophilus SBT 2062 (FERM P-10730) is added thereto and the mixture is packed into a vessel having 0.5-4.0cc/m<2> day oxygen permeating amount and fermented.
