Abstract:
The invention relates to a process for selective and quantitative elimination of lactoglobulins from a starting material containing whey proteins, wherein the aforementioned starting material is brought into contact with a strongly basic type anion exchanger, the pH of the aforementioned starting material being between 4 and 6 when the ash content of the starting material is between 0 and not more than 1 % by weight, and between 6 and 8 when the aforementioned ash content is between more than 1 % and 3 % by weight, so as to retain the lactoglobulins selectively and quantitatively on the anion exchanger, the anion exchanger on which the lactoglobulins are retained is separated from the remainder of the aforementioned starting material, and this remainder, free from lactoglobulins, is collected. Use in the production of milk-based dietary foods for infants.
