Abstract:

PURPOSE: A liquid seasoning of the separate type having clear interface, exhibiting good separate state free from cloudiness and milkiness phenomena when it is separated again into an oily phase and an aqueous phase after shaking and leaving it to stand, obtained by adding xanthan gum to the aqueous phase and lecithin to the oily phase.

CONSTITUTION: In a liquid seasoning of the separate type such as a dressing which is again separated into an oily phase and an aqueous phase when it is left to stand and shaked and emulsified temporarily when it is used, a Chinese liquid seasoning, etc., 0.005W0.1wt% xanthan gum is added to the aqueous phase, 0.005W0.5wt%, preferably 0.007W0.2wt% lecithin is added to the oily phase, and 0.03W0.3wt%, preferably 0.05W0.1wt% calculated as powder of an amino acid seasoning of the animal type is preferably added to the aqueous phase.
