PURPOSE: To provide an emulsifiable composition giving an emulsion having fine particle size and excellent stability, by dissolving a protein together with saponin or its salt in a polyhydric alcohol, and adding an oil to the solution.
CONSTITUTION: The objective emulsifiable composition contains (A) saponin and/ or its salt which is known as a naturally existing crude drug having physiological and pharmacological activities such as expectrant, antitussive, cholesterol metabolism promotion, lipid metabolism promotion, etc., (B) proteins (e.g. gluten, collagen, etc.) and/or their salts known as natural water-soluble polymers, (C) water-soluble polyhydric alcohols having ≥2 hydroxyl groups in the molecule (e.g. ethylene glycol, glycerol, etc.), and (D) an oil component. The emulsifiable composition can be converted to an O/W-type emulsified composition by adding water thereto.
