Abstract:

PURPOSE: To obtain a stable emulsified liquid seasoning containing MISO (fermented bean paste), resistant to oil separation, by compounding an emulsified liquid seasoning with MISO and locust bean gum.

CONSTITUTION: The water-phase of the emulsified liquid seasoning used as the base is composed of water, vinegar, soy, salt, egg yolk, sugars, and chemical seasonings, and is emulsified with the oil-phase such as vegetable oil to form an O/W-type emulsion. The emulsion is mixed with 5W30% MISO and 0.1W1% locust been gum to obtain the objective emulsified liquid seasoning containing MISO. The seasoning is used as a saled dressing, and the kind and the amount of the ingredients are properly selected according to the kind of the salad.
