PURPOSE: To obtain a food which does not cloy the palate, by adding heat- gelatinizable starch powder and heat-coagulable egg to heated and crushed potato, and forming and heating the mixture.
CONSTITUTION: Heated and crushed potato is used as a main material, and is mixed optionally with subsidiary materials and/or seasonings, and formed and heated. In the above process, heat-gelatinizable starch powder and heat-coagulable egg are added as setting materials to the mixture. The amounts of the starch and the egg are 1W10wt% and 0.2W2wt% (solid basis) of the raw materials, respectively. The heated and crushed potato can be obtained by steaming or boiling the potato before or after peeling, and crushing the steamed or boiled potato to proper size. The amount of the potato is ≥20wt% of the total weight of the final product. The food thus obtained may be frozen for the convenience of storage.
