Abstract:

PURPOSE: To obtain a seasoning and spices having improved quality, by blending a main raw material for seasoning and spices with a specific amount of all or part of crabs crushed into thin pieces having a smaller size than a specified diameter or powder.

CONSTITUTION: Chionoecetes japonicus Rathbun, Chionoecetes opilio, Paralithodes camtschatica, Paralithodes brevipes, Erimacrus isenbeckii, parathranites orientalis, etc. may be used as crab. When part of crabs are used, shell, skin of meat, internal organs, bone, etc. are preferably used with respect to utilization of waste. All or part of crabs are dried, and crushed into thin pieces having ≤5mm diameters or powder. 0.01W50wt% of the crushed material is added to seasoning, and species, such as fish flour, ingredient for soup, ingredient for pickle, etc.
