Abstract:
PURPOSE: Pine cones are softened by dipping them in a mixlture of slaked lime and salt and heated in an aqueous baking powder solution and the cones are pickled in vineger to prepare pine cones which is palatable, storable for a long period of time, thus being used as a processed food.
CONSTITUTION: Young pine cones are dipped in a mixture of slaked lime and salt for more than 10 days and rinsed with water. The pine cones are boiled in aqueous baking powder solution, until they become soft, then exposed to cold water. They are further pickled in a mixed solution containing vinegar and sugar for more than 1 month to give the objective product. The pickled pine cones are storable for years without use of preservatives.
