PURPOSE: To improve the pungent acidulant taste and irritative smell of rice vinegar, impart refreshing taste and antiallergic activity, and make the vinegar takable extremely easily, by adding unrefined sugar to rice vinegar.
CONSTITUTION: Rice vinegar is diluted with water, and added with unrefined sugar such as muscovado and if necessary with unrefined rice vinegar to obtain a health drink. Daily use of rice vinegar is effective to increase the calcium ion concentration in blood serum, raise the alkalinity of blood, improve the stiffness of the shoulders, hypertension, arteriosclerosis, constipation, etc., and relieve fatigue. However, rice vinegar is difficult to be taken as it is because of its characteristic strong pungent acidulant taste and irritative smell. The addition of unrefined sugar not only improves the taste and smell but also imparts refreshing taste and antiallergic activity to the vinegar to afford a desirable health drink.
