Abstract:

PURPOSE: To enable the preservation of the meat for grilled chicken for a long period keeping its quality, by sealing skewered meat for grilled chicken together with a disoxidation agent in a gas-barrier container, and storing at a low temperature.

CONSTITUTION: Skewered meat for grilled chicken is heated, optionally sterilized its surface with flame, sealed together with a disoxidation agent (e.g. iron, iron oxide, iron sulfite, pyrogallol, ascorbic acid, etc.) in a gas-barrier container (e.g. vinylidene chloride film or a film coated or laminated with polyvinylidene chloride, etc.), and stored at -20W+10°C. The raw material for grilled chicken can be stored for a long period keeping high quality.
