Abstract:
PURPOSE: Stems of WAKAME sea weed is treated with a calcium salt or alum to give pickles of WAKAME which does not soften even in sterilization, keeping crispy texture.
CONSTITUTION: Stems of WAKAME sea weed are dipped in about 0.3W2.0% aqueous solution of edible calcium salt or alum for about 10W24hr, cut into pieces of an appropriate size, desalted, then dipped in a pickling solution and sterilized with heat.
