Abstract:

PURPOSE: To provide a food preservative having especially remarkable effect to suppress the proliferation of Bacillus subtilis ATCC6633, and uninfluential to the taste and flavor of foods, by dissolving a slight amount of lysozyme in an aqueous ethanol solution.

CONSTITUTION: The preservative is composed of a 50W75% (w/v) aqueous solution of ethanol containing 300W500ppm of lysozyme, and is added and mixed homogeneously to a food in an amount of 3W4%.
