Abstract:

PURPOSE: A novel food rich in plant protein and nutritive value, having good taste, by cooling a mixed solution of soybean milk and an agar solution so that it is solidified in a jelly state.

CONSTITUTION: For example, an agar solution is prepared from agar, sugar, and water. While, soybeans which are immersed in water and contain water are ground by a bean grinder, and a liquid soybean juice is prepared. It is boiled, bean-refuse is removed by a separator, to give liquid soybean milk. The agar solution is blended with the soybean milk, and cooled to give the desired jelly soybean milk and agar.
