Abstract:

PURPOSE: To obtain a processed edible meat having high preservability, resistant to the change of color, taste and flavor and having excellent appearance, taste and flavor by mixing edible meat such as fish meat with a separated soybean protein containing little oligosaccharide, kneading the mixture and heat-treating the product at a high temperature.

CONSTITUTION: Edible meat of fish, etc., is mixed with a separated soybean protein having an oligosaccharide content of ≤0.4wt.%. The objective processed meat is produced by kneading the mixture and heat-treating the kneaded product at a high temperature.
