Abstract:

PURPOSE: To obtain the titled substance suitable for the freezing of fish and shellfish, by mixing wheat gluten composed mainly of maltose and dextrin with an alcohol such as sorbitol, ethanol, etc.

CONSTITUTION: An ice glazing agent is prepared by mixing (A) wheat gluten composed mainly of maltose and dextrin with (B) 5W400wt% (in terms of anhydride), based on the wheat gluten, of one or more alcohols selected from sorbitol, glycerol, propylene glycol and ethanol. The ice glazing agent is dissolved in water to obtain an ice glazing solution having a concentration of ≥3.5wt%, preferably 5W10wt% (in terms of anhydride), and fish or shellfish is dipped in the solution and frozen.
