Abstract:
PURPOSE: To prepare a novel proline iminopeptidase capable of acting on peptides having proline as the terminal amino group specifically, by extracting the fruiting body or fungal cell of a SHIITAKE mushroom with a salt solution containing ethylenediaminetetraacetic acid.
CONSTITUTION: The fruiting body of fungal cell of a SHIITAKE mushroom is extracted with a salt solution containing ethylenediaminetetraacetic acid at about neutral pH, and the resultant extract is then purified by the conventional method to obtain proline iminopeptidase capable of specifically decomposing peptides which are amino acids having a pyrrolidine ring at the terminal amino group, e.g. proline or hydroxyproline.
