Abstract:

PURPOSE: To obtain kneaded soybean milk containing sugar useful as a raw material for confectionery, having mild taste free from odor and bad taste, by dissolving a specific amount of a saccharide, sugar alcohol or their mixture in soybean milk, concentrating the blend into a specific solid concentration under reduced pressure.

CONSTITUTION: 1.5W5 times as much saccharide (e.g., sugar, etc.), sugaralcohol (e.g., sorbitol, etc.) or its mixture as solid content of soybean milk is dissolved in soybean milk obtained from soybeans by a conventional procedure, the solution is concentrated under reduced pressure, to give the aimed kneaded soybean milk containing sugar having ≥50wt%, preferably 70W80wt% solid concentration.
