Abstract:

PURPOSE: To obtain malt having excellent taste and flavor, good color, and well- grown mycelia, by contacting the malt substrate during malt preparation process with fermentation gas generated in the course of the fermentation of brewed unrefined liquor.

CONSTITUTION: A gas outlet is attached to the top of a sealed fermentation tank of brewed unrefined liquor, and the outlet is connected to a malt preparation apparatus with a hose, etc. The fermentation gas generated during the fermentation of unrefined liquor is introduced with a pump or by its pressure at an automatically controlled flow rate into the malt preparation apparatus.
