Abstract:

PURPOSE: To prepare the titled heat-resistant substance simply in a short time, by feeding continuously flaky chocolate having a fixed fat content to rolles having ≤ a given temperature, making it lamellar by press pressure of the rolls, granulating it.

CONSTITUTION: Flaky chocolate having 22W34wt% fat content is continuously fed to rolls at ≤30°C, the gas of the rolls is adjusted, and the chocolate is made into a lamellar matter having a given thickness by press pressure of the rolls. The lamellar matter is granulated, and, if necesary, it is sieved, to give granular chocolate having the desired particle size. Since the granular chocolate thus prepaed has relatively small particle size, it may be eaten directly, it may also be mixed with nut paste, butter, etc. and used for decorating cakes.
