Abstract:

PURPOSE: To obtain Moromi (unrefined Sake) for providing pickled vegetables with a particular taste, by blending fixed amounts of salt, koji and steamed rice, lagging the blend, feeding it, adding a specific amount of ground, and steamed soybeans based on the total amounts of the blend.

CONSTITUTION: About 20W30wt% salt is blended with 40W50wt% koji, and 70W 80wt% steamed rice, stirred properly, and mixed with about 20W30wt% based on the total amounts of soybeans which are ground by a grinder, steamed by a pot and cooled. Prepared Moromi is packed into bags of polyethylene film, sealed hermetically, and sold. Since this moromi has been blended with the steamed soybeans, it has a taste of seasoned Miso (fermented soybeans), and provides pickled vegetables with a better taste.
