PURPOSE: To make TOFU (soybean curd) continuously and automatically by boiling down the soybean milk which is formed by feeding soybean flour into a soybean milk formation tank and sending the milk through the controlling tank into the curd formation tank.
CONSTITUTION: Soybean flour is fed into the starting tank 1 equipped with a scraper 3, sent through connection tube 6 provided with the press-feeding blade 11 and metering valve 7 into the soybean milk formation tank 2. At the same time, water is added from the pipe 15 and they are mixed with stirrers 13, 14 to form soybean milk. The soybean milk is fed through connection tube 21 into the boiling kettle 22 and boiled down as the milk is stirred with the blade 24 and steam is blown from the nozzle 25 into the tank 21. Then, the milk is introduced through the sucking tubes 33 and 34 into the casing 37 in the control tank 32, stirred with the screw 38, and cooled down to a desired temperature, as cooling water is passed through the circulation pipe 39. The casing 37 is inclined to feed the milk into the curd formation tank 50, and a coagulation agent is added to form the curd.
