To provide a transferase having high activities at a high temperature, and to provide a method for producing saccharide by using the transferase.
The transferase can produce a transglucosylated product having α-1, 2-bond or α-1, 3-bond at a high temperature because the transferase has a high residual activities even at the high temperature of 50-65°C. The risk of contamination with various bacteria at the production process of the saccharide is small compared to the conventional transferase because the high-temperature treatment can be carried out. Further, the risk of forming an insoluble product is small because the reaction rate is high, the charged amount per unit volume can be increased, and macromolecular components are hardly assembled.
