Abstract:
PURPOSE: To preserve a food by the treatment of the food with ozone having excellent microbicidal effect even on thermostable microorganisms by washing the food with a specific aqueous solution of ozone.
CONSTITUTION: A food to be sterilized, e.g. rice of old crop is washed with an aqueous solution of ozone containing a chlorine-based additive such as sodium hypochlorite at an available chlorine concentration of 0.1-1mg/L and preferably further a mucous carbohydrate such as peptic acid in an amount of 100-600mg/L. The ozone concentration of the ozone solution is preferably 0.1-2mg/L.
