Abstract:

PURPOSE: To improve the recovery of say sauce by filtering the heat-treatment scum of soy sauce with a filtration apparatus furnished with a rotary filtration membrane, etc.

CONSTITUTION: The heat-treatment scum of soy sauce is introduced into a rotary flat-membrane filtration apparatus 1 (an apparatus composed of a casing 2 having a stock liquor inlet port 3 and a concentrated liquor outlet port 4, a filtration chamber placed in the casing 2 and composed of a rotary filtration member 10 having a filtration membrane 15 covering the outer circumference, a filtered liquid discharging path 20 passing through the filtration chamber and a driving shaft 5 supporting the filtration member 10 and rotatably supported by the casing) under a pressure of 1.2kg/cm2. G and filtered at an average filtration rate of 25.0L/m2.hr per unit area while rotating the filtration membrane at 300rpm. A filtered liquor free from turbidity can be prepared by this process.
